I would especially like to note that I consider the topic of vegan dishes similar to real meat to be at least strange. If you want the taste to be like meat, if you need it, if you feel sad without meat, don't torture yourself, eat meat. So far, this is not prohibited by law. In the future, perhaps, probably - they will ban it, now, for the time being - it is possible.That is, there is nothing wrong when it comes to vegan dumplings, vegan cutlets, when under the word cutlets or dumplings they simply try to describe the format of the dish, its shape. But when they say that vegan buckwheat cutlets are so cool because they are very similar to meat cutlets, this is already nonsense. The idea of being a vegetarian is not to constantly look for something that looks like meat, the idea of being a vegetarian or vegan is to feel good without meat.
Pea sausage
But back to the pea cutlets. I came across several recipes; sausage was made from chickpeas, peas, lentils. The beans were soaked overnight and then ground in a blender. They did not boil, but simply heated in a small amount of water over low heat. Or, in other recipes, peas were ground into small pieces, into flour in a coffee grinder and boiled for 5-10 minutes.Someone adds a starch thickener, someone does not. The undercooked bean puree is salted and peppered, tinted with beetroot juice, and put into a mold from a plastic bottle to set. Then they cut it up and happily eat it on camera "ummm, what a delicious vegan sausage, like meat."
I suspect that in some videos bloggers showed and ate in front of the camera not what they actually got, but real meat sausage. They had too happy faces and the sausage was too similar to the real one.
So, we soaked the peas when they were soaked and crushed in a blender. Then, according to the recipe, boiled, added spices. While every vegan sausage recipe writer I've come across advises barely boiling or no more than 10 minutes, we boiled for almost 20 minutes.
And still, the peas are clearly undercooked. In a normal way - peas are cooked for an hour, crushed peas are cooked for 40 minutes. Peas that were boiled for 10 minutes - not only is it not tasty, it is hard to digest by the stomach. Beans - when consumed in moderation - a healthy product, but this food is heavy for the digestive system, and poorly cooked beans - even more so.
So, my conclusion is that something has been distorted on the Internet again, pea sausage is a bad idea. Thanks for not getting sick. It is better to cook normal pea puree, and if you can’t live without meat, eat meat.
Of course, I admit that we ourselves made some kind of mistake and ruined a normal recipe. Perhaps sometime in the future we will try to cook again and I will change my mind. As for vegetarian recipes, they are enough - good, without trying to create artificial meat.
